Secular quality

The tradition of the olive cultivation and production of a quality oil date back to the mid-sixteenth century in Monte San Vito.
In that period the local community was given a “concio ab oleo” that was privately run by a public auction according to specific producing standards.
The olive oil must have come only from two pressings, those of the pulp and the stone under penalty of 25 scudi.

Historic mill

The legislation in force at the time required all olive oils produced to comply with strict quality standards.
An ancient 1600 mill with its powerful milling stones and heavy wooden presses can be visited in the historical centre of Monte San Vito which is today the final destination of the many tourists and passionate olive oil lovers coming annually from all over the world.
